Objective:
Designed for students who have completed beginner training. These sessions focus on understanding the "why" behind brewing and barista techniques—empowering students to create and refine beverages for commercial settings.
1. Intermediate Barista Skills (6&7.Sep)
- Recap of beginner skills
- Espresso tasting and dialing in
- Exploring the impact of milk pouring technique on taste
- Workflow and bar management
- Introduction to water chemistry and its role in extraction
2. Intermediate Brewing Workshop (13&14.Sep)
- Review of beginner brewing principles
- How to dial in a brew based on taste feedback
- Gear selection based on brewing style and goals
- Recipe design and its impact on flavor clarity, strength, and balance
- Impact of flavour by water composition
- How to present and serve a professional pour-over
3. Introduction to Coffee Sensory & Analysis (20&21.Sep)
- Understanding taste perception and sensory vocabulary
- Learn how to describe flavor, aroma, and mouthfeel
- Introduction to sensory assessment (triangulation, cupping, etc.)
- Scoring coffees using a structured protocol
4. Introduction to Coffee Roasting & Theory (27&28.Sep)
- Overview of roasting methods (drum, fluid bed, hybrid)
- Identifying and understanding common roast defects
- The three roast phases and how they influence flavor development
- Basics of roast logging and data tracking
5. Latte Art Pattern Design Workshop (TBC)
- Beyond the basics: intermediate-to-advanced patterns
- Pour control, contrast, and symmetry
- Combining elements to create original designs
- Practical repetition and critique
